Pumpkin is one of the usual vegetables that my family eats. We cook pasta, porridge and rice with pumpkin. We do not throw the pumpkin seeds away – we keep and dry them for our cute hamster to eat.

This pumpkin cod fish pasta only takes less than 30 minutes to prepare and cook. It’s an easy meal to make and the most important thing is that it’s nutritious. I like this pasta and even my daughter gives a thump-up for this pasta.

As pumpkin is naturally sweet and the cod fish makes the soup even more tasty. Usually in my dishes, I do not add a lot of seasoning.  A little salt is enough to enhance the taste of the soup.

Preparation time : 10 minutes

Cooking time : 20 minutes

Serving size : 2

Ingredients :

  • 1 litre (estimate) Filtered water
  • 300g to 500g (estimate) Pumpkin, cut into small cubes
  • 1 Onion, diced
  • 1 cup Organic pasta
  • 2 cups Spinach, cleaned and cut
  • 1-2 Cod fish fillets
  • 0.5 tsp Sea salt
  • 1 tbs Coconut oil

Step by step instructions :

  1. Add coconut oil and sautee the onion with the pumpkin over medium fire. Cook until the onion is soft.
  2. Add water to cover the pumpkin and cook for 2 minutes.
  3. Add the pasta to cook with the pumpkin for about 5-8 minutes, until the pasta is almost cooked.
  4. Mash the soft and cooked pumpkin manually. Alternatively, you may want to cook the pumpkin until soft and mash it before adding the pasta to cook.
  5. Add the cod fish and spinach and cook until the fish can break off easily.
  6. The pumpkin pasta is ready to be served.
